Oven 400 deg F.
Boil potatoes for 15 mins, last 8 mins add the eggs to hard boil. Drain. Mash with olive oil, add grated mutmeg.
Wilt spinach. Squeeze out water.
Melt butter and add flour to make a roux, add bayleaves. Add milk and whisk, add stock. Bring to boil to thicken and simmer for 10 mins . Add mustard 1/2 of cheese lemon juice, salt and pepper. Once cheese melted take off the heat.
Cut fish into chunks and arrange in large baking dish. add eggs, then sauce, then spinach. Top with mashed potatoes and 1/2 of grated cheese.
Bake for 45 mins at 400 deg F.
