Mix the ingredients and press into a greased 8" pie dish (separating variety). pressing the biscuit mixture to form a thin base and also a little way up the sides. bake in a preheated oven for 10 to twelve minutes at 350f until lightly brown. allow to cool.
Use an electric mixer and beat the egg yolks to thicken and turn a light yellow (do not over mix). Turn off the mixer and add the condensed milk, on low speed add half of the limejuice and allow mixture to incorporate. Add the remaining limejuice and mix until smooth. Pour mixture into the pie dish and scatter the zest on the top. Bake at 350F for approximately 20 minutes to kill any possible salmonella, test the top centre of the pie, which should not be sticky to the touch and the sides should be starting to turn a light speckled brown.
