Title: Ham, Leek and Brie sandwich
Yield: 4 servings
Preparation: Halve the leeks lengthwise. Trim off the root end from each leek and all but 2 inches of the green part. Clean thoroughly under cool running water. Cut the leeks crosswise into Vs-inch-thick slices.
In a frying pan, melt 2 tablespoons of the butter. Add the leeks and season with salt and pepper. Saute until the leeks just begin to turn golden. Add 3/4 cup water and simmer over medium heat until the leeks are tender and the water has evaporated, about 10 minutes. Remove from the heat.
Cut the Brie into thin slices. Layer 4 slices of the bread with half of the cheese; then add the ham and spread with the sauteed leeks. Top with the remaining cheese and bread slices
Cooking: Using the remaining 2 tablespoons of butter, cook the sandwiches in a frying pan over medium heat until the bread is golden brown and the cheese has melted, about 2 minutes per side
