Title: Italian White Fish Soup



Saute onion, garlic, red pepper flakes, celery, and mushrooms in a nonstick pan sprayed with olive oil spray until onions soften.
Squeeze lemon juice on vegetables.
Add tomatoes, chicken stock, fish stock, wine, basil, parsley, marjoram, and pepper to vegetables.
Cook soup 30 minutes.
Add fish, salt to taste, and cook until fish is done, about 10 min­utes.
Serve each bowl garnished with a teaspoon of grated Asiago cheese.


This is a terrific, hassle-free dish to make far company. You can even make it the day before just add the fish right before serving.
