Title: Panna Cotta with Dried Cherry Compote
Put gelatin in cold water and set aside. Bring remaining ingredients to the boil. Be sure to dissolve the sugar with a whisk. If using vanilla bean slice in half and scrape out the insides. Spray 6 ramekins or dishes with pam. Remove softened gelatin and whisk into cream mixture. Pour mixture into ramekins. Refrigerate for at least 8 hours.
Cherries - combine all ingredients and cook until cherries have plumped and sauce has a slightly thickened consistency.
