Instructions

Water, honey, yeast in a bowl (use mixer bowl if using)
Mix to dissolve honey and yeast (10 secs with mixer)
Add 1/2 the flour and mix for 2 mins
Add sea salt and mix for 2 mins
Add rest of flour and mix for 15 mins
Rest for 10 mins (in mixer if using) lightly covered.
Pulse for 10 secs at high speed..olive oil hands to get the dough out and onto board (keep topside up)
Create a big ball with spatula and place in oiled bowl, cover and let rest for 1 hour.
Olive oil hands and remove dough, cut form into 4 balls.
Semolina/flour tray and put on the balls, cover with cling wrap and let rest for 6-8 hours. Can be put in the fridge overnight if necessary.
Make pizza or freeze the dough balls.
