Wash rice with several changes of water then soak for 30 mins.
Pour olive oil into pan, when hot add chili, dal, mustard seeds and sesame seeds. As soon as the mustard seeds begin to pop add the drained rice turmeric and salt. Turn heat to medium and saute for a minute.
Add 1-1/4 cups water, bring to boil and simmer very low for 25 minutes with the lid on
For 2 cups of rice use 2-2/3 cups water.
