Stollen

Ingredients

500 g Flour
10 g Baking Powder
200 g Sugar
1 tsp Vanilla Extract
1/2 tsp salt
1/2 tsp Almond Essence
1 tsp Rum
1 tsp Lemon juice
1/4 tsp Cardamon
1/4 tsp Mace
2 Eggs
125 g Butter
50 g Suet
250 g Dry Quark OR ricotta
125 g Currants
125 g Sultanas
125 Almonds or Hazelnuts
40 g Lemon zest
for brushing: 50g melted Butter
for covering: 50g Icing Sugar

Instructions

Mix Flour and Baking Powder on a Baking board, in the center put the Spices, Sugar and Eggs and work together, then add the Butter and the Suet and the strained Quark
and all the rest of the ingredients. Add a little Flour if it sticks. Shape into the Stollen, bake for 75 minutes on medium heat (325 deg F?)
Brush and cover while warm
