Title: Venison and Bulgar Meatloaf

Preheat oven to 350 deg F. Line a 10x10 brownie pan with parchment paper, cover bulgar with water by 2 inches. Soak 15 mins and squeeze dry.
Make salsa - mix all ingredients cover and refrigerate until needed.
In a food processor pulse onions, tomatoes and garlic until you have a rough puree (Alt: fine chop) Combine veg puree and drained bulgar with remaining ingredients. Mix well and put in prepared pan, pat into even layer and brush top with 1 Tbs. olive oil.
Bake meatloaf until cooked through and beg to brown on top 30 mins. Remove and brush with 1 Tbs. oil, let rest 5 mins before serving.
